Organic Extra Virgin Olive Oil De-Stoned DOP Tuscia

Production Zone: Montefiascone (Viterbo), Italy
Olive: This Oil is obtained from pressing the pulp from the variety of olive know as frantoio after the olives have been pitted.
Method: Organic Farming
The farm harvests the olive fruit when the olives start getting dark; this is crucial for the production of a light, slightly fruity – low acidity flavoured oil.
The olives are picked on company land only and pressed, within the span of 3-4-hours in the farm’s press; IL MOLINO olive oil is full of chlorophyll, polyphenol and tocopherol, which help the anti-oxidant process and represent a precious source of vitamins.
The anti-oxidant activity of the polyphenol and tocopherol has positive effects on cardiovascular health.
We keep olive oil in containers under nitrogen to avoid the oxidation and to protect their health benefits.
Formats: 250 ml and 500 ml

Organic Flavoured Extra Virgin Olive Oil

Flavoured oils are created by stepping herbs in our organic extra virgin olive oil .
Lemon oil is made by milling olives together with lemons.
Our flavours are: Lemon, Orange, Chilli pepper & Garlic, Rosemary, Basil.

Organic Olive Patés

Our organic Paté are made in house with our green olives, which are left in brine for 4 months and then stoned. With the paste we obtain, we produce pure olive Paté or we add Oregano or Chilli pepper or Fennel.

Organic Jams

Apricots, Plums and Sour Cherries, an ancient variety of wild cherry, are picked by hand from our trees. The fruits are turned into organic Jams using simple recipe handed down in our family from generations.

Organic Pasta from Senatore Cappelli

In Italy the best known is the Senatore Cappelli Wheat.
This is a grain of the past remained authentic ie that has not undergone any modification by man to increase the yield.
First of all the products made with this type of grain have particularly good and tasty flavors and odors
They are machined with the grinding stone, the flour that is produced is therefore much less refined than that produced with modern wheat.
Thanks to this type of work, in fact, we have a product that we could consider semi-integral, or with respect to flour 0 or 00 are kept much more nutritional properties present in the grain. They have a more balanced relationship between starch and gluten, containing a lower percentage of this protein. The reduced presence of gluten in these grains, makes products derived from it much lighter, digested and assimilated than those made with modern grain. The consumption of this ancient grain reduces the risk of a gluten intolerance.
Tall ears and dark of Senatore Cappelli since they have not been altered, have a lower yield compared to modern wheat, this justifies a higher price compared to a healthier product.
Consume the ancient grain also helps small producers who cultivate their land with love and respect for the environment.
Buy ancient grains also means protecting the biodiversity of their territory or other areas of Italy.
These grains fact, precisely because the production costs are higher compared to a lower yield, are likely to disappear!

Organic Skin Care Products made with Olive Oil

Product Description: Produced and used since ancient times, olive oil is found in many popular, traditional remedies due to its moisturising protective and regenerative properties. As far back as Ancient Rome olive oil massages were thought to be baths of youth.

The vegetable extracts contained in the range of skin care products by Il Molino are organically grown and prepared just before use, which make them particularly effective. Their active ingredients are preserved intact.
The natural substances we use to make the olive oil skin care products are not altered at all, they remain intact with their soothing and emollient properties.
The products don’t contain chemical solvents, only spring water.
To enrich the formulas we chose natural ingredients such as essential oils, medicinal herbs, seeds, flowers and leaves. Thank to their various qualities, these natural ingredients give to each sort of product the best properties.

The skin care products has been certified as organic by ICEA.

Between Tradition & Innovation

Molino follows a cultivation practice exclusively organic, only the olives produced in our own lands are pressed in our corporate oil mill.

Olives are harvested using the foliage brushing technique, developed exclusively by Il Molino.  Having fallen in to large nets, they are hand-picked and placed in airy containers, then immediately moved to the oil mill for the grinding.

The resulting oil is stored in steel containers kept under nitrogen to fully preserve the organoleptic qualities of the product, avoiding its oxidation.

The tillage is diversified for the cultivar, the stoned mill, the light one and the Canina variety, which has a stronger flavor.

The extra virgin organic olive oil produced by Molino obtained the PDO Tuscia Certification.
