Our organic flour is stoneground from our Senatore Cappelli durum wheat, an authentic, original, historic Italian variety that has never been genetically manipulated. Its tall ears offer a modest yield rich in protein, fibre and vitamins; its low gluten content makes it easier to digest than non-Italian varieties.
