The fennel seeds lend this pâté a typically Tuscian taste, as wild fennel is a popular ingredient in traditional Viterbo recipes. Our olive pâté is made with our own green and black olives that have been left to ripen in brine for 4 months. They are then stoned and worked at low temperatures to conserve their full flavour and aroma.
